I have a very favorite piece-and I recommend this to anyone:Ralph Vaughan 
Williams-"Fantasia on a theme by Thomas Tallis".A mesmerizing and haunting 
piece for a string orchestra.It is based on an old English church hymn.It 
never fails to "get" me.Just sit and llisten to this piece unfold-it's a 
captivating experience.It is usually paired with another lovely 
piece-"Fantasia on Greensleeves".The recording I love the most is on EMi 
Classics by Sir John Barbirolli and the Sinfonia of London.On that cd it 
also has Edward Elgar-"Introduction and Allegro",also very nice.Music fans 
mseek this one out!
Other favorites that haven't been mentioned:
Barber-"Adagio for Strings"-used in the movie "Platoon"
Copland-"Appalachion Spring"-a true blast of Americana
Mahler-Fifth Symphony
Vaughan Williams-Fifth Symphony.
Tchaikovsky-"Romeo and Juliet"-also "Swan Lake"
Debussy-"La Mer"
Bach-"Well tempered Clavier"-played by Glenn Gould-Electrifying!

  And many many others.
  By the way-I heard a snippet of the "Tallis Fantasia" played at the 
Oscars-I think it may be used in "Master and Commander".
