If you're looking for something relatively simple, try Behringer. It comes with mac software.

Subject: RCA-to-USB/FireWire adapter and software
Hi there everyone! I was at Best Buy this afternoon, and found two products that would allow me to connect any RCA-type audio equipment (like a turntable or cassette deck) to a computer via a USB adapter. However, the software included for both products only runs on Windows, and I am a Mac guy.
So my question to those of you in the know is: if I were to get the adapter/cable thing, would I be able to use Soundtrack Pro to record the output from my analog/RCA device? Or is there a product specifically for Macs that bundles the hardware and software?
Thanks in advance!
Don
