Alejandro Escovedo.
I've probably seen him close to 30 times over the past 15 years and his shows have always been nothing less than stellar. Off the top of my head, I think I've seen him in at least these configurations:
solo acoustic
acoustic guitar/violin
2 electric guitar/bass/drum
guitar/lap steel/keyboard
2 guitars/bass/drum/violin/cello
2 guitars/bass/drum/violin/cello/horn section
2 acoustic guitars/2 violins/cello
Each time he arranges his songs to let them breath accordingly with his unique line ups.
My only quibble is that when he plays covers (which he usually plays one or two a show), he usually rotates between the same 10 or so over and over and over and over...
