I didn't see the show, but I'd bet that it's the same old trying-to-appeal-to-the-mass-audience tack. Nevertheless, for the kind of material Lovett does, he sounds pretty good to me. And of Hootie, well, they're a perfectly capable, safe-sounding band, in my opinion, and the producers could have picked worse. That said, when trying to appeal to a mass audience, what exactly is it that constitutes "appropriate big name artists"?

Nothing personal against Lovett, but he can't sing, so he made "God Only Knows" sound terrible. (Maybe the point was to demonstrate that Wilson's music is so beautiful that it's beauty cannot be diminished by Lyle Lovett's singing.) And nothing against Hootie and the Blowfish, but this is a mediocre group that hasn't had a hit in ten years and was totally incapable of performing the songs. Even with the help of a battalion of offscreen singers they still sounded terrible. I could see if they were one of a number of bands, but they let H and the BF do three songs! If they couldn't get any appropriate big name artists, then they should've at least gotten Carnie and Wendy Wilson to perform. That would've made some sense on an emotional level.
