I've been using Music Collector (http://www.collectorz.com) for a few
years now and it's just a brilliant, easy to use piece of software. It's
a little more costly now than it was when I bought it, but you get free
upgrades for life, so that counts for something.
It does every single thing you've listed below - and has an easy export
feature in case you want to, say, publish your list online (or keep
printed records).
Now not only do I know how many CDs (and LPs and tapes) I have in my
collection, but it also ads up the value I've assigned to each item so I
have a nice number I can submit to home insurance.
