Enuff Z'Nuff definitely straddles the genres of metal and power pop, so 
anything by them would work, but I've always been a really big fan of 
"Wheels," from "Seven."

Saigon Kick's "My Life" is an absolutely phenomenal Beatles-meets-Queen 
pastiche...complete with kazoo solo, no less!

The Galactic Cowboys' "I Do What I Do" was a highlight of an otherwise "eh" 
disc.

I know there are more, but those are three that leap immediately to mind 
that fit your criteria...though you could certainly argue for songs like 
Poison's "Talk Dirty To Me," which is total bubblegum, or, for something a 
bit more obscure, Night Ranger's "Color of Your Smile."
