Problem is that I'm a PC user... :*(

You would go to:

Edit / Preferences / Importing

Change to the type of compression you would like to use.

Then select the songs in the main library you wish to convert and go to:

Advanced / Convert Selection to 'Whatever'

'Whatever' should be the file type you selected in the first step.  
Everything you rip from CD will now use that format as well, unless you 
go back to preferences and change the option again.
