I think what it boils down to is maybe not whether it's a demo, but what 
version I hear first.. It's whatever you get used to.  Even if it is intended 
to be a demo, and the quality might not be as good, if you like the song, 
you kind of get attached to it sounding that way.. 

There have been other artists who have re-recorded one of their songs 
or a hit later, and I can't think of any of those instances where I've liked 
the remake either.

I sort of concur with you, but I like the demo to sound almost "shockingly
different" from the final studio version.
That is to say, to offer a different spin or new element/idea to the song.
