Mostly because there are enough people who want to combine the two to create
a movement.
There are some interesting combinations within the Jewish music scene:
Yidcore - Australian Jewish punk
Hip Hop Hoodios - Latino-Jewish hip hop
RebbeSoul - Jewish world beat/jazz
Soulfarm - Jewish jam band (I think)
These are exceptions, rather than the rule as far as Jewish music goes.
