Apropos of the paraphrased quote, to whit, "Writing [/Talking] about
music is like dancing about architecture," I've most often heard it
attributed to jazz-composer extraordinaire Charles Mingus, but have also
heard it attributed to a bunch of others.
So given this google-age we live in, I did a quick search, and came up
with this:
http://home.pacifier.com/~ascott/they/tamildaa.htm
which posits that the earliest firm, verifiable attribution for the
quote, according to that particular website owner, is Elvis Costello.
Also found a website that attributes the quote to Robyn Hitchcock. And
a few others avidly supporting John Cage.
Oddly, the quote isn't in Bartlett's Familiar Quotations. At least not
that I can find in the online version.
Now, back to our music.
